The Oarsman Restaurant X Chiltern Venison Night

Thursday 5th September 2024- a venison themed dinner with a magnificent array of dishes. For an audience of 50 diners, I gave a whistlestop tour (in 4 minutes) of the origins of our deer species, their history in the UK, the challenges their numbers present from a conservation and biodiversity perspective, cookery tips and the health and environmental benefits of substituting venison in lieu of farmed meats.
And nobody fell asleep.
